Chicken and Berries Mixed Green Salad

Mixed Green Salad with Grilled Chicken and Berries

Fresh salad bursting with summer fun, romaine & spinach are topped with grilled chicken, triple berries, and an easy homemade balsamic vinaigrette

PREP TIME 10 MINUTES  | COOK TIME 10 MINUTES | TOTAL TIME 20 MINUTES

Yield: 2 servings | Serving Size: ½ salad, 4 oz chicken


Ingredients

For Salad:

  • 1 8-ounce chicken breast; sliced lengthwise into 2 thin cutlets

Note:  (use 2 chicken breast if larger portion size is desired)

  • 1 cup  strawberries, sliced

  • 1 cup blueberries 

  • 1 cup blackberries

  • 2 tablespoon roasted almonds (or sliced); sprinkle evenly on both salads

  • 1-2 tablespoon low- fat feta cheese; per salad

  • 1 head romaine, chopped

  • 2-3 cups of mixed greens 

  • Olive oil spray 

  • Kosher salt or Celtic Sea Salt 


Homemade dressing: 

  • 1/4 cup balsamic vinegar

  • 1/4 cup olive oil

  • 1 teaspoon Dijon mustard*

  • Dash salt

Directions:

Preheat the oven to 400ºF (204ºC). 

Step 1: Place chicken breasts in a shallow bowl or Ziploc bag and ½ dressing and marinate chicken for 30 minutes. 

Step 2: Take a baking dish and season with salt and Italian seasoning.

Step 3: Add marinated chicken to baking dish and Bake on 400F for about 25 minutes, or until the chicken is cooked through. Let the chicken rest for five to 10 minutes then cut it into slices.

Step 4: Meanwhile, divide the mixed green between plates and top with the blackberries, strawberries, and chopped walnuts. 

Step 5: Directions for Dressing: In a small bowl or measuring cup, whisk together the dressing ingredients together. 

Step 6: Assemble, eat and enjoy

To Eat Immediately: In 2 bowls or meal prep containers, divide the lettuce then top each with ½ the avocado, strawberries, and red onion.

For Meal Prep: set out 2-3 containers, add mixed greens to center of container, add additional ingredients to corners of container;  berries, feta, almonds. Store reserved dressing in a separate container to be used later.
